Overnight Slow Cooker Sweet Potatoes

The sweet potato is packed with nutrients such as beta-carotene, manganese, copper, and fiber and can be a great way to start the morning! This recipe can obviously be used for any meal of the day, and if you are on a rotation diet, then plan to utilize leftovers as part of lunch and dinner for the day! Top with melted butter, coconut oil, or nut-butter sauce to add some good fat and protein!

Ingredients

4 sweet potatoes, scrubbed well
1-2 TBS coconut oil, grass-fed butter, or other oil of choice, for topping
Cinnamon, cloves, or ginger

Directions

  1. Wrap sweet potatoes in foil (in general I'm not a big fan of aluminum foil, but in this case it is necessary for making the sweet potatoes). Prick with fork 6 times around the sweet potato.
  2. Arrange in slow cooker and cook on low for 8-10 hours or on high for 6-8 hours.
  3. To serve, open (carefully!) and top with seasonings of choice. Serve with a sautéed leafy green of choice and soft-cooked eggs, if desired.
