Minted Green Peas & Carrots

Frozen peas are both nutritious, tasty and easy to prepare. Peas are a wonderful addition to just about any meal. Add this combination of peas and carrots and their health-promoting nutrients to your Healthiest Way of Eating

Prep and Cook Time: 15 minutes

Ingredients:

2 lb package of frozen peas, thawed
4 medium-size carrots, peeled and diced into ½ inch pieces
4 TBS chicken or vegetable broth
1 medium onion, minced
1 medium clove garlic, pressed
1 TBS fresh chopped mint
4 TBS fresh lemon juice
2 TBS extra virgin olive oil
salt and black pepper to taste

Optional:

6 TBS sunflower seeds or 2 TBS sliced almonds

Directions:

  1. Peel and dice carrots into 1/2-inch cubes.
  2. Bring water to a boil in a steamer with a tight fitting lid.
  3. Place carrots in steamer basket. Cover and steam for about 5 minutes and then add peas.
  4. Continue to steam for another minute. Remove from heat.
  5. Meanwhile, heat 1 TBS broth in a 10-inch stainless steel skillet. Healthy Sauté onion over medium heat in broth for 5 minutes, stirring frequently. Add garlic and continue to sauté for another minute. Add steamed carrots and peas along with mint, salt, and pepper. Mix well.
  6. Remove from heat and toss with lemon juice, and olive oil.
