Italian Roasted Vegetables

1 package (16 ounces) fresh or frozen broccoli
1 package (16 ounces) frozen green beans
1 red pepper, sliced
1 sweet onion, sliced into rings
2-3 carrots, sliced into rounds
1/2 teaspoon garlic powder
1/2 teaspoon seasoned salt (such as Herbamere)
1/2 teaspoon pepper
4 tablespoons butter
½ teaspoon each oregano, thyme, and basil (dried)

Directions:

  1. Preheat oven to 400 degrees.
  2. Place butter in roasting dish, and place in preheating oven.
  3. When butter is melted, add the sliced onions, peppers, and herbs, salt, and garlic powder. Toss well.
  4. Roast in oven for 10 minutes. Then stir. Continue to do this for 10 more minutes.
  5. Add broccoli, green beans, and carrots. Toss to combine.
  6. Roast for about 20 more minutes, stirring every 10 minutes until tender.
  7. When tender, remove from oven and sprinkle with Parmesan Cheese and serve!
  8. These reheat great as leftovers, or can be tossed on organic greens for a salad!
