Hidden Veggie Meatloaf

3 pounds lean ground beef
1/2 teaspoon dried sage
1 teaspoon sea salt
1 teaspoon dry mustard
1/2 teaspoon fresh ground pepper
4 cloves garlic, minced
2 small onions, finely chopped
1 cup chopped cabbage or shredded leftover broccoli stalks

Instructions

  1. Preheat oven to 350 degrees.
  2. Saute onions, cabbage and/or broccoli shreds in about 1 TBS coconut oil until soft.
  3. Add herbs, spices, and garlic and saute for 2 minutes.
  4. Combine in a bowl with ground beef and shape into loaf pan.
  5. Insert into 6 quart oval crock pot. Cover, and cook on low for 6-8 hours. You'll know the loaf is done when it's brown on the top and it starts to pull away from the sides.
  6. When thoroughly cooked, turn off and unplug the cooker and let the meat sit for about 15 minutes before removing from the pot.
