Baked Pesto Chicken Breasts

Serves 6-8

Ingredients:

16 oz. of prepared pesto sauce (make your own, or chose one that has only olive oil rather than soybean or canola oils)
4 boneless, skinless chicken breasts

Directions:

  1. Place chicken breasts in an oven-safe casserole dish with a top.
  2. Cover with pesto sauce; making sure that both sides are covered.
  3. Baked, covered, at 350 for 45 minutes. Uncover and bake for 10 more minutes.
  4. Enjoy with steamed green beans or atop spaghetti squash!
